Gordon watched the weather carefully, this painting had been in his mind for some time. Up before dawn & on location as the sun struggled to melt the early mist, this painting had to be visualised, conceived & finished before the sun brightened the sky for another scorching day & equally important, before the last petit dejeuner was served.
The mist is essential to the wines of Sauternes & contribute a unique quality that no amount of scientific fiddling & cunning chemistry will ever equal. The mists arise from the valley of the little river Ciron & gently flood the warm landscape by night. The damp moist warm air causes a mould to grow quite unlike any other, on the grapes of Sauternes. This magic mould, pourriture noble (noble rot), a microscopic fungus called botryis cinerea improves the grape quality by a concentration of sugars, sweetens the flavour of the grapes & although each mist is quickly burnt off the landscape by the new day's sunshine, the influence is critical to the unique complexity & character aromas and flavours, notably that special flavour called "gout de roti" meaning roasted. The production of Sauternes require selective harvesting, in several sweeps, each yield is very low. No other wine is so sensitive to the hazards of climate as this rarest of all golden white dessert wines.
